Farmers to forks - Transparency:
80:20 Commitment to Sustainability: Transparency is the cornerstone of our approach to sourcing and production. We like to be realistic: although we want to prioritise produce that is fresh, well-grown, locally produced and directly to the source, we refuse to budge on quality.
We've set a bold goal to have 80% of our ingredients and products aligned with our values within the next three years. This means making conscious choices that prioritize sustainability, fairness, and quality over convenience or cost. By holding ourselves accountable to this standard, we're striving to create a food system that nourishes both people and planet.
Now, let's take a closer look at the diverse array of ingredients that grace our tables:
Farm Fresh Produce: Our farm is a treasure trove of flavors, boasting an abundance of jackfruits, gingers, coconuts, chili vareities and more. These tropical delights not only thrive in our rich volcanic soil but also reflect the unique terroir of our region. From the sweet flesh of ripe jackfruits to the aromatic spice of fresh gingers, each harvest is a testament to the bounty of nature and the joys of sustainable agriculture. We have started to expand our sweet potatoes, taro, cassava to the point where we can almost harvest all we need from here. We use our tropical fruits in dressings, preserves and cocktails.
Local Eggs: We take pride in supporting backyard producers within a two-kilometer radius of our restaurant. These small-scale farmers raise their chickens with care and respect, allowing them to roam freely and forage for natural foods. The result is a superior quality of eggs that not only taste better but also support the local economy and promote animal welfare.
Cloud Forest Honey: Our honey comes from generational harvesters who tend to their hives in the pristine forests surrounding Maderas volcano. These skilled artisans have honed their craft, using traditional methods passed down through the ages.
Ometepe Coffee: Our coffee come green and whole-bean, from the surrounding fields and plantations. We vary our sources depening on the year’s harvests. We toast and grin in house, to give the freshest flavors to your cup.
Yocate: We source herbs and sweet potatoes from Yocate, an organic farm on the mainland. They have better conditions for temperate herbs that we love enhancing our dishes with. Thyme and rosemary here on the island are tricky to help thrive. Yocate’s commitment to ethical and sustainable practices aligns perfectly with our values, ensuring that every ingredient meets our stringent quality standards. By supporting initiatives like Yocate, we're not just buying produce; we're investing in a future where farming is regenerative, not extractive.
Fresh Catch from Local Fishermen: Our seafood, when we can stock it, is sourced from fishermen in nearby Pacific villages such as Gigante and Astillero. These coastal communities have a deep connection to the ocean and a profound respect for its bounty. By purchasing directly from local fishermen, we're not only supporting their livelihoods but also promoting sustainable fishing practices that safeguard marine ecosystems for generations to come. Due to its proximity, seasonality and fragility its not always available on our menu. We only want it when it’s good!
Artesanal Beers
The beers we showcase are artesanally crafted in Managua, and come in a variety of flavors and styles. They’re designed and created by Falk Erdmann.
Mindful Meat Sourcing: While we strive to produce as much as we can as locally as possible, we recognize the importance of ethical and sustainable meat production that is currently above our capacity. Our pork comes from a homestead butcher in Tola, ensuring high standards of animal welfare and meat quality. These pigs are raised in a humane environment, where they have ample space to roam and express natural behaviors. The place is suitably equipped to be safe for handling meat production and of a high quality feed and cut.
Quality Beef from San Martin: Our commitment to sustainability extends to our beef sourcing as well. We've partnered with San Martin, a Nicaraguan butcher renowned for their commitment to quality and ethical practices.
While we acknowledge the environmental impact of beef production, we know that its still a desired option by many, so we focus on quality; by choosing a supplier with rigorous standards, we can be sure of excellent cuts and safe handling practices. It’s not as close or small scale as we like, but its quality assured and national.
Our ground beef comes as locally as it gets, from meat that ranges free and is collected within hours of being slaughtered. we get large cuts and grind them ourselves in house to turn into our burger patties.
We aim to create webs and connections, we don’t believe in being self-sustainable: humans don’t live in isolation, it takes a whole village, with a varied skill-set.
